They have honey, oats, and raisins in them, that makes them healthy!

Right?

I won’t lie:  if I’m looking down at a plate with a chocolate chip cookie and an oatmeal cookie on it, I’m going to take the chocolate chip cookie.  That being said, I do still like oatmeal cookies and, when I’m feeling like I need to strive for something a touch healthier than a traditional chocolate chip cookie, I’ll whip up a batch of oatmeals.

I love this recipe for many reasons.  The main two reasons are because these are quick to make and they are yummy.  What more is there to look for in a cookie recipe?

If you don’t have brown sugar, you can substitute the 1/4 cup brown sugar with 1/4 cup regular sugar with a touch of molasses added to it.

 

Chocolate Chip, Oatmeal, Raisin Cookies

Prep time:  10-15 minutes     Cook time: 10-12 minutes

Ingredients:

  • 1/2 cup butter, softened
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 1 egg
  • 1 teaspoon vanilla
  • 3/4 cup flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups quick cooking oats
  • 1/2 cup raisins
  • 1/2 cup chocolate chips

 

Directions:

Preheat oven to 375 degrees F.

In a large bowl, cream together butter and brown sugar.  Add in honey, egg, and vanilla.

In a smaller bowl, mix together the flour, baking soda, and salt.  Add the dry ingredients to the butter, sugar mixture and stir until well combined.  Add the quick cooking oats.

Mix in the chocolate chips and raisins.

Scoop out Tablespoon sized rounds and plop onto an ungreased cookie sheet(or one lined with parchment paper).  Bake 10 minutes or, if you like your cookie’s edges to be a touch browned, for 12.
