Cowboy Coffeecake and Darth Vader. Need I explain that my daughter helped?
I’m not going to lie, when I think of coffeecake (or coffee cake, I’ve heard it both ways – kudos if you get the Psych reference) this version is what comes to mind. A simple cake with a reminiscence of cinnamon that is topped with a cinnamon, sugar crumb topping. All of the other coffeecakes out there are great, but I like this simple recipe. Plus, it goes great with coffee, like a simple, plain doughnut.
While researching, no one seemed to have an explanation for why it was called cowboy coffeecake. However, the sentence above might be a clue. Everyone relates police officers with a simple doughnut and a cup of coffee. Maybe, back in the day, guys on a ranch liked a simple cake with their coffee. That’s just a guess.
So, let’s get cooking!
Cowboy Coffeecake
Prep time: 10-15 minutes Bake time: 25-30 minutes
Ingredients:
- 2 1⁄2 cup all-purpose flour
- 1⁄2 teaspoon salt
- 2 cups brown sugar
- 2⁄3 cup butter
- 2 teaspoons baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon cinnamon
- 1⁄2 teaspoon nutmeg
- 1 cup buttermilk (or what I like to do is 1⁄2 cup milk and 1⁄2 cup sour cream)
- 2 eggs
- AND 1⁄4 teaspoon cinnamon (optional)
Directions:
Preheat oven to 375 degrees F and either line two 8×8 inch baking dishes with parchment paper or grease the baking dishes.
Mix together flour, salt, and sugar. You can either cut in the butter or melt the butter and mix it in with the flour, salt, and sugar. I’ve tried both ways and both work. Scoop out 1⁄2 cup of the crumbly mixture and set aside.
To the remaining crumbly mixture, add the baking powder, baking soda, 1⁄2 teaspoon cinnamon, and nutmeg. Mix well. Add in the milk (or milk and sour cream) and eggs. Mix well.
Pour the batter into the two baking dishes.
If using the remaining 1⁄4 teaspoon cinnamon, add that to the crumbly mixture you set aside earlier. Sprinkle the mixture over top of the batter.
Bake for 25 to 30 minutes.
