
By now, it’s clear that I like simple recipes. Though I adore complicated ones with a million and a half ingredients that take multiple beyond multiple steps to complete because of the complexity of flavor that results, I’m a mom on a farm. Most of the time, I don’t have time.
Which means when snack time rolls around and I realize that we have no food to quickly grab because that one project forced me to put off going to the grocery, I need something that can be made simply and quickly.
Cue the dried cherry scones!
Dried Cherry Scones
Ingredients:
- 2 cups flour
- 2 Tablespoons sugar
- 3 teaspoons baking powder
- 1⁄2 teaspoon salt
- 6 Tablespoons butter
- 1 slightly beaten egg
- 1/2 cup milk
- 1⁄2 – 3⁄4 cup dried cherries
- Heavy cream, for brushing
Directions
Preheat oven to 425 degrees F.
Mix together the flour, sugar, baking powder, and salt.
With a fork, your fingers, or a food processor, cut butter into dry ingredients until it resembles course crumbs. Add egg and milk, mixing only until the ingredients are incorporated.
Turn out on a floured surface and fold dried cherries into dough as you knead it for one minute. Cut dough in half and pat each half down into a 1⁄2 inch circle.
Cut each circle into 6-8 wedges and transfer each wedge onto a baking sheet, about two inches apart.
Brush each wedge with the heavy cream and bake 12-15 minutes.

Simple, quick, and satisfying!
