
This is what happens when Santa says that he wants a burrito left out rather than cookies and his daughter wants to make sure he gets his fill.
Seriously, this is fun to make and gets everyone laughing at the size while cutting it into individual servings. The basics of a mega burrito is four large tortillas stacked in an interlaced square and enough of your favorite fillings to make it insanely large. The recipe below is what we went with for fillings, but you can chose whatever you fancy.
Mega Burrito

Ingredients:
- 1-2 pounds meat of choice – we went with a mix of fajita style steak and chicken
- 1-2 cups rice (we added cilantro and lime juice to ours)
- 2 cups refried beans
- 2 avocados sliced
- 1 cup of Pico de Gallo
- 1 cup sour cream
- 1 cup shredded cheese (we went with cheddar)
- 4 large tortillas
Directions:
Set the tortillas on the table in a square shape, making sure that the edges overlap enough to hold together when rolling the burrito.
In a line along the tortillas closest to you, layer the fillings as to your preference. We went: meat, rice, beans, avocados, Pico de Gallo, sour cream, and shredded cheese.

This next step may take two people to do, but it can be done with just one set of hands. Carefully lift the tortilla ends that are closest to you up and over the fillings. Fold the outer side edges over top of the fillings and continue rolling until you reach the back edges of the tortillas.
If you want, decorate the top of the burrito with some extra Pico de Gallo and place a large avocado next to your monster masterpiece to show all of your friends just how big this beast is.
