This is a variation from an earlier recipe I did, Hash Browns, Sausage, and Egg Sheet Pan Bake, with more vegetables.  I am loving the simplicity of the sheet pan recipes and this one can be made to cater to whatever hunger whims are being craved at the moment.  Swap out some of the veggies for summer squashes, use sweet potato hash instead of regular potatoes.  Hot  dogs instead of ham.

Without further ado, I give you:

Mixed Vegetable and Ham Hash Bake

Prep time: 10 minutes   Total cook time: 32-42 minutes

Ingredients:

  • 2-3 potatoes
  • 1-3 cups chopped vegetables of choice (I did onion, broccoli, and carrot)
  • 3 Tablespoons butter, melted
  • 3 Tablespoons olive oil
  • 1⁄2-1 teaspoon salt
  • 1⁄2 teaspoon pepper
  • 1⁄3 – scant 1⁄2 cup broth
  • 1 Tablespoon honey mustard
  • 1⁄4 teaspoon onion powder
  • 1⁄4 teaspoon garlic powder
  • 1-2 cups cubed ham
  • 3-6 eggs
  • pinch salt to season eggs

 

Directions:

Preheat oven to 420 degrees F.

Grease baking sheet or, what I prefer, line baking sheet with parchment paper.

Peel and grate potatoes onto a thin towel.  Collect corners of towel together and wring out excess juice from potato.  Place potatoes in a pile on the baking sheet along with the chopped vegetables.  Pour the melted butter and olive oil over the pile and toss to ensure all is coated.  Spread out into the thin layer and sprinkle with salt and pepper.

Bake 25-30 minutes or until vegetables are lightly browned.

While the vegetables are baking.  Mix together in a small bowl the broth, honey mustard, onion powder, and garlic powder.

When the vegetables are done, remove from the oven and collect into a mound in the center of the sheet pan.  Add ham on top of pile, then pour the broth mixture over the whole thing.  Toss/stir to coat everything with the sauce and spread back out into the thin layer.

Make 3-6 wells in the vegetable mixture depending on how many eggs you are having.  Crack an egg into each well and sprinkle some salt over the egg.

Return to the oven and bake for an additional 7-12 minutes, depending on how well done you prefer your eggs to be.
