With the wintry cold blowing an icy wind that sinks deep into our bones, a hearty and warm meal hits the spot perfectly. This version of a grilled cheese sandwich comes with some extra oomph that is sure to melt away any lingering chills.
A Smashed, Loaded, and Coated Grilled Cheese

Ingredients:
- A serving of tomato soup
- 1 avocado
- a spritz of lemon juice
- pinch of salt
- 1 Tablespoon of butter
- 2 slices of cheese (I went with American sliced, but whatever you like will work)
- 1 slice of ham
- 2 slices of bread
Directions:
Warm the tomato soup and set to the side, making sure to keep it warm
Cut the avocado in half, remove the seed, then scoop out the avocado meat into a bowl. Smash until it’s mashed, then stir in the spritz of lemon juice and pinch of salt. Set to the side.
Add the butter to a pan on the stove set to medium heat.
Meanwhile, stack the sandwich together: place one slice of bread on the table, lay a slice of cheese on the bread, next is the slice of ham. Smear the mashed avocado on top of the ham. Top that with the second slice of cheese, followed by the second slice of bread. This whooper is loaded!
Once the butter is melted, take some of the melted butter and brush it over the top slice of bread to make sure it has a buttery coating. If you need to add more butter, go ahead. Wait until the melted butter is sizzling before setting the whole thing in the pan.
Let the sandwich fry until it is a buttery, browned crispness. Usually 1-2 minutes. Flip (CAREFULLY) and repeat on the other side.
Once done, set the sandwich on a plate and give it a minute to rest to allow the cheese to get to a proper melted stage.
If you’ve decided to be bold, go ahead and pour some of the tomato soup over top of the grilled cheese.
