I’ve been looking for a good pizza dough recipe for years.  I’m sorry, I’m picky when it comes to a pizza crust.  It must have some weight to it, bot not so much that you feel like your chewing on a bunch of bread with a tiny hint of toppings.  It shouldn’t feel doughy, but also not dry.  And on, and on, and on.  Again, I’m sorry (though I don’t know why I’m apologizing).  I’m picky.

BUT

I have finally found a recipe that gives me a crust that I love.

Amazing Pizza Dough

 Yield: enough to make 2 pizzas or one sheet pan pizza

Prep time:  15 minutes plus rising

Cook time (if making 2 pizzas): 10-15 minutes

Ingredients:

  • 3 1⁄2 cups flour – I do a mix of 1⁄2 cup red whole wheat and 3 cups white whole wheat or all purpose
  • 1 teaspoon salt
  • 1 teaspoon sugar or honey
  • 1 package – or 2 1⁄2 teaspoons – active dry yeast
  • 1 1⁄2 cups warm water
  • olive oil
  • melted butter

 

Directions

In a large bowl, pour warm water over the active dry yeast and honey.  Let sit for five minutes to proof.

Once finished add in half of the flour and all of the salt.  Mix well and keep adding flour until the dough forms well enough to be able to start kneading it.  Add in the rest of the flour as you knead the dough for six minutes.

Oil the bowl with the olive oil.  Place the ball of dough in the bowl, turning once to cover it with the oil.  Place a moist kitchen towel or plastic wrap over the bowl and let rise for at least one hour up to 3 hours.

When ready to make pizza, you can follow whatever directions you prefer.  The one I did for this example was to make two pizzas.

For that I heated the oven to 500 degrees F, cut the dough in half and rolled each half out to my desired thickness.

Carefully slide the dough onto a greased pizza pan and gently prick the dough all over with a fork.  The key, here, is gently.  You don’t want to cut all the way through the dough and leave a bunch of holes for the deliciousness to drip through.

Take the melted butter and brush it all over the dough until there is a nice glaze on it.  You can use olive oil instead, if you prefer.

Then, add your desired toppings.  I did traditional pepperoni and cheese.

Of course, it would have been convenient if I had remembered to put the sauce on before carefully placing the cheese on the dough.
