These muffins have the flavor of a fantastic muffin and the texture of melt in your mouth cake. Wonderfully delicious. They are super quick to whip together and pop in the oven for breakfast, snack, or those moments when your toddler is clearly hangry.
Blueberry Yogurt Muffins
Prep time: 10 minutes Cook time: 20-22 minutes
Makes 6 – 8 muffins
Ingredients
- 1 cup all-purpose flour
- 1/3-1/2 cup sugar
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 egg
- 1 teaspoon vanilla
- 1/2 cup plain yogurt (I use the thicker, Greek style yogurt)
- 3 Tablespoons butter, melted
- 2 Tablespoons milk
- 1/2 – scant 1 cup fresh blueberries
Directions:
Preheat oven to 350 F
In a small bowl, mix flour, sugar, salt, baking powder, and baking soda. In a larger bowl, mix the egg, vanilla, yogurt, butter, and milk. Add dry ingredients to the wet and stir just until moistened. Carefully add the blueberries.
Fill greased or paper-lined muffin cups 3/4 full. Bake for 20-22 minutes or until a toothpick inserted in the center of a muffin comes out clean. Cool for a few minutes, then remove from pan to a wire rack.
