These playful cookies were inspired by a want to feel slightly adult, while also ravishing in buttery chocolate goodness.  The white chocolate chips were all my daughter’s idea.  She loves white chocolate and, while I’m not usually a fan, they did add a nice touch to this recipe.

 

Double Nutty, Triple Chocolate Chip Cookies

Yield: 2 dozen     Prep time: 15 minutes    Cook time: 12 minutes

Ingredients:

1/2 cup butter

1/2 cup brown sugar

1/2 cup sugar

1 teaspoon vanilla extract

1/2 cup creamy peanut butter

1 egg

1 cup plus 2 Tablespoons flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 heaping cup finely chopped walnuts

1/2 cup each:  dark chocolate chips, milk chocolate chips, and white chocolate chips

 

Directions:

Preheat oven to 375

In large bowl, melt butter and let cool.  Add brown sugar, sugar, vanilla extract, and peanut butter.  Mix well.  Add the egg and beat until mixed in.  In a small bowl, mix together the flour, baking soda, and salt.  Add to the butter mixture.  Finally, add walnuts and all chocolate chips.

On a parchment paper lined baking sheet, roll cookie dough into walnut sized balls and space a couple inches apart.  Bake 10-12 minutes depending on if you like your cookies soft or with a slight crispness.

I’m supposed to say, “let cool,” but honestly, who waits?!
